Avocado Caprese Kale Salad

Ingredients

  • 2 cups cherry or grape tomatoes, halved

  • 2 ripe avocados, sliced

  • 8 oz fresh mozzarella, sliced

  • 1/4 cup fresh basil leaves, torn

  • 2 tbsp olive oil

  • 1 tbsp balsamic glaze

  • Salt and black pepper to taste

  • 4 cups chopped kale (or mixed greens)

Instructions

  1. In a large bowl, combine the chopped kale (or mixed greens), sliced avocados, halved cherry tomatoes, and sliced mozzarella.

  2. Drizzle with olive oil and balsamic glaze.

  3. Season with salt and black pepper to taste.

  4. Gently toss to combine all ingredients.

  5. Serve immediately or chill for a short time before serving.
